This Brazilian coffee is naturally processed
Natural processed coffee, also known as dry-processed coffee, is a method where ripe coffee cherries are sun-dried with their fruit intact before the beans are extracted. This process imparts a distinct and vibrant flavour profile, often characterised by fruity notes.
Paulo and his daughter Ana Paula, an agriculture engineer, hail from Mogiana, Brazil. Together they run two farms – one in Sao Paulo and another in Guape, Minas Gerais. Coffee is in their blood, and with Ana Paula at the helm, it seems the tradition will continue for generations to come. (Fun fact: Ana Paula is actually a high school friend of their General Manager, Bruna!)
